This was the inspiration for our Brazil Peaberry single origin coffee. Lively with slight acidity, beautiful fruit notes and a hint of chocolate, figs and dark berry, this coffee is amazing to the very last drop. 

What is a "Peaberry" you might ask? 

Peaberry coffee is a unique natural mutation that occurs within the coffee cherry, representing roughly 5% to 10% of any given harvest. While a standard coffee cherry contains two flat-sided seeds (beans) facing each other, a peaberry develops when only one of the two ovules is fertilized. This results in a single, small, oval bean that is shaped like a pea—hence the name.

Why It’s Special

Because the plant focuses all its energy and nutrients into one seed instead of two, many enthusiasts believe peaberries possess a more concentrated flavor profile. You will often find they have a higher acidity, lighter body, and more complex aromatic notes compared to standard beans from the same crop.

Processing and Roasting

Peaberries are labor-intensive. They must be meticulously sorted by hand or using specialized sieves after harvesting. Roasting them is also a distinct craft:

  • Uniformity: Their round shape allows them to roll easily in the roasting drum.

  • Consistency: Unlike flat beans, which can scorch on their edges, peaberries transfer heat more evenly.

  • Precision: Because they are denser, they require a specific heat profile to ensure the center is roasted without burning the exterior.

How do I brew Clipper to Rio - Brazil Peaberry Single Origin Coffee?

As a starting point use one to two tablespoons of coffee per 250ml of water, and brew with water between 195 and 205 degrees Fahrenheit - about 30 to 60 seconds off the boil. Match your grind to your brew method, from very fine for espresso to very coarse for a French press, and do not steep a French press longer than four minutes or it will turn bitter.
